The hubby has been talking about making blackberry cookies for months, so finally I had to try! I think these ones taste more like muffin tops.

1 cup butter, softened
1 1/2 cups sugar
2 eggs
1 teaspoon cream of tartar
1 teaspoon baking soda
1 teaspoon vailla
1/4 teaspoon salt
2 3/4 cups all purpose flour (I used 1/2 wheat flour)
3 cups berries (frozen or fresh)
1/2 cup extra sugar for rolling cookies in
In a large mixing bowl, beat the butter with an electric mixer on medium to high speed for 30 seconds. Add the 1 1/2 cups sugar and combine. Beat in eggs, cream of tartar, baking soda, vanilla, and salt until combined. Beat in flour. Add berries. (I used an electric mixed which resulted in less whole berries and more smooth batter. Cover and chill 2-3 hours.
Preheat oven to 375. Shape dough into 1 inch balls. *Berries will make the dough sticky still, but this creates a fluffier muffin texture.* Roll balls in sugar to coat. Place balls 2 inches apart on an ungreased cookie sheet.
Bake for 10-12 minutes or until light brown. Transfer to wire rack to cool. Enjoy!

I tweaked a cheesecake cookie recipe using dried berries to use fresh berries! They were a huge hit! Enjoy!
1 cup butter, softened
6 oz cream cheese, softened
1 cup sugar
1 tsp salt
1 tsp vanilla extract
1 egg
2 tbsp milk
2 cups flour (I used 1/2 wheat flour)
roughly 2 cups blackberries ( I used frozen)
Heat oven to 325.
Cream butter, cream cheese, sugar, salt, and vanilla. Add egg and milk, mix well. Blend in flour. With mixer on low, blend in berries.
Bake 15-16 minutes until bottom edges just start to brown.
"When I say ‘I will be true to you’ I must mean it in spite of the formalities, instead of the formalities."
— Jeanette Winterson, Written on the Body
Today I am longing for all of my friends that are far away. For all the memories made. For the places visited. For the mundane that could not have been better. For roomies and lovers and all in between. For lost friends and found friends and groups that may never be reunited. Therefore, I am looking forward to seeing one friend tonight even more.
Tonight I am writing my first draft of my capstone. And, as it is every time I re-read parts of the piece I am working on, I have a huge urge to share with the world how amazing it is. So for anyone who hasn’t read anything by Jeanette Winterson, do it. Now. Seriously. I am fairly certain that I have never read a more amazing author. Don’t expect to get it right away. That’s the beauty. It takes time to appreciate. And 2 or 3 or 100 readings. You will never spend enough time re-reading and you will never get sick of it. I may be a bit obsessed, but that is only a result of the level of amazing that all of the writing is. So with that blabber, I will end with a quote from my favorite of pieces by said author.
“I did not tell you this yesterday or the day before. Habit had silenced me the way habit does. So used to a thing no need to speak it, so well known the action no need to describe it. But I know that speech is freedom which is not the same as freedom of speech. I have no right to say what I please when I please but I have the gift of words with which to bless you.”
Here I am. Starting a blog. All because the most wonderful Danielle started one and I wanted to follow it. So this is my logical conclusion. I’m not sure how fruitful this will be or how often I will actually post, but here it goes.
